Winemaking should be a matter of consistency. The winery has to provide continuity to the vineyard, shaping the wine while respecting the sense of the grape, in true atelier fashion. This way, the terroir is expressed in wines with a unique character, the expression of a place, and its own style.
Winemaking starts at harvest. The grapes are harvested by hand, thus reducing stress on the plant and allowing the grapes to reach the winery intact and in the best possible condition for winemaking.
Once harvested, the grapes enter the winery in a matter of minutes, preserving all their qualities. The aim is to minimize contact between the unfermented must and oxygen and, once in the winery, to lower the temperature of the grapes by using cooling equipment and CO2.

For the winemaking process, we use concrete vats and old barrels to obtain modern, fine, and elegant wines that highlight the aromas of the grapes and encapsulate the values of the La Mancha terroir.
Our wines are fermented and aged in bare, −unlined− concrete vats, giving them a better structure and ensuring they develop well in the bottle, maintaining all the aromas of the grape and terroir.
Part of the wine is fermented in 10,000L concrete vats and small 700L concrete eggs, with the rest in 20,000L temperature-controlled stainless steel vats.
The extraction process is always done gently by hand, using destemmed grapes without crushing them, with low fermentation and maceration temperatures that vary according to the grape variety. Malolactic fermentation is carried out in concrete vats and partly in barrels, depending on the type of wine.
The aim of the ageing process is to stabilise the wine and enhance its natural clarification without filtration. For this purpose, concrete tanks and barrels are used, where the lees settle more easily. All our wines are aged in the cellar, ranging between one and four winters, thus stabilising naturally.
